Nationally and locally, demand for local food is exploding while the existing food distribution system is geared to large-scale, long-distance delivery. In West Central Minnesota, “food deserts” are springing up even though the area is heavily based in agriculture. By working with local sustainable farmers, I will build the structure for and promote the concepts of providing fresh, healthy local food in the deep winter and bridging the “infrastructure gap” between local producers and consumers.
